Beef Enchilada Recipe

I've got another recipe for y'all today. This is another one from Kelly's Korner. You can find her original recipe HERE. I think the only thing I do differently is add more spices. We like it spicy around here. :) This is the same blog I got my BUTTERFINGER CAKE RECIPE from. 

Here's the Beef Enchilada recipe:

1 lb. ground beef
1 sm. onion, chopped
1 can chopped black olives
1 can cream of mushroom soup
1 can enchilada sauce
8 oz. shredded cheddar cheese (I use slightly more than this) :)
10-12 flour tortillas
* I also add garlic powder, cumin, and garlic salt to taste. 

Brown meat and onions together. Add olives and 3/4 of the cheese. Add garlic powder, cumin, and garlic salt (if using) and mix it all together. Fill tortillas with meat mixture and roll up. Place in 13x9 pan. Combine cream of mushroom soup and enchilada sauce (I use a whisk) and pour on top. Top with remaining cheese. Bake at 350 degrees for 30-40 minutes.

This mixture is so good, I could eat it by itself. :)

This is fresh out of the oven. Oh my goodness...I'm starting to  crave these now. :)
Ever since I found this recipe, my hubby has been requesting it and now it's on our regular rotation. :) Hope y'all try it too. It's so good!

  3. Holy Moly! That looks good. I will share this recipe with my husband. We love Mexican food and have made enchiladas before but not this recipe. May need to make this. Thanks so much for sharing!
